Alli’s Homemade Cornbread Recipe
This Homemade Cornbread Recipe one of my favourite comfort foods these days! Goes perfect with almost any hearty meal.. and if you ask my mom she used to give it to me for breakfast drizzled with corn syrup. Apparently, it’s a Gander Newfoundland thing!
I personally haven’t been able to bring myself to try that yet… Maybe that will be next weeks video
What You’ll Need:
- 1/2 cup butter
- 2/3 cup white sugar
- 2 large eggs
- 1 cup buttermilk (1 cup milk, 1 -1.5 TBSP vinegar)
- 1/2 tsp baking soda
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 tsp salt
Extras to Jazz It Up:
- 2 Jalapenos diced
- 1/2 can of corn (I like it for flavour so I put it in the food processor before adding to the mix)
- 1/2 cup old cheddar cheese
Steps:
Step 1:
Preheat oven to 375 degrees F (175 degrees C). Grease an 8-inch square pan or muffin tray.
Step 2:
Melt butter in a large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended. Add in Jalapeños’, corn and cheese. Mix Well. Pour batter into the prepared pan.
Step 3:
Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the centre comes out clean.
* I usually do mine in muffin tins for individual servings
